Scottish Highland Cattle Meat is Premium Beef

The Scottish Highlander has a modern beef carcass with lean, well-marbled, flesh that ensures tenderness and succulence with a very distinctive flavor. Highland beef is healthy and nutritious with lower levels of fat and cholesterol and a higher protein and iron content than other beef.

The Scottish Highlander's proven ability to produce top quality meat without the addition of expensive high quality feeds makes this breed the perfect choice for those people who wish to produce beef with natural inputs.

Scottish Highland beef is slow-maturing making it a premium beef which is lean, well marbled with low fat and cholesterol levels whilst remaining rich in protein and flavor, criteria increasingly demanded by today's market.

A heavy coat insulates against a harsh climate and reduces the need to develop excess back fat.

Recent studies in both North America and the UK have shown that Highland Beef is consistently much lower in fat content and cholesterol than other breeds. It is so lean that it compares with chicken and fish fat content.
The marbling of the beef gives the same tenderness and tastiness as the other larger breeds.

Studies in the US have verified that Highland Beef is 38% lower in fat content and 4% lower in cholesterol than steaks from local supermarkets.

The Ossabaw Island Hog

 

Island of Eden Farms maintains a small herd of Ossabaw Island Hogs. These are displaced Spanish Iberico Pigs via the Canary Islands in the 150 s. They adapted in isolation off the coast of Georgia and are now world class, American Heritage Hogs.

Our hogs are raised outdoors in large spaces, an environment naturally fitting for the wildness, resilience, and sustainability of the breed. Although slower growing, the outdoor finished Ossabaw is loaded with vitamin D and nutrients only available to animals raised in actual sun light outdoors and allowed the great diversity of forages available in the Comox Valley British Columbia.

Ossabaws are indeed unique with meat and fat loaded with fatty acids, omega 3's, unsaturated fat and oleic acid which is predominant in olives. The Ossabaw fat is so unsaturated that it nearly turns to liquid and melts at mere room temperature.

What that means to the buyers is that beyond the amazing health data the foraging Ossabaw meat, cured or fresh, is spectacular and firmly established in the debate regarding the finest pork to be had on this planet. We finish ours on the amazing Comox Valley forages of local walnuts and Chestnuts. Add in the fruits of Island Of Eden Farms and Wild Blackberries which are predominate here and you should expect to have an amazing and uncompromising product.

 

Berkabaw

The AOF Berkabaw Hog is a fantastic cross both of the Ossabaw and Berkshire both  in a 50/50 and 75/25 ratio.  It is our solution to bringing many of the marvelous qualities of the Ossabaw into the marketplace at a lower price point for consumers

The Island of Eden Farms Berkabaw is an exceptional quality pork that blends the best production advantages of the two breeds. We gain significant advantage with an increase of weaned piglets due to strong maternal instinct from the Osssabaw and increased litter size from the Berkshire. On the Ossabaw we add depth of body, a smaller bone that improves the meat to bone ratio and efficient hard fat development that has an amazing flavor and texture. With the Berkshire we gain length of body, gentleness/manageability, terrific yield, great fat to meat ratio, short muscle fiber (tenderness) and accelerated growth.

Both breeds are excellent foragers that take full advantage of our Terroir to produce extraordinary quality pork.

The Berkabaw is a terrific fit for its high quality pork and outdoor production efficiency, especially on sites like ours with basic infrastructure. It complements the wonderful Patterson’s Registered Berkshires very well while we reserve the pure bred Ossabaw for specialty events, competitions, and those with heavy cap artisan curing needs like lardo and extreme long cure hams in the Spanish Iberico style.
